Civiltà in tavola. La cultura del cibo tra tradizioni, storia e diritto

The relationship between humans and food represents one of the main topics of reflection and debate that every society needs to face throughout its history, to build defend and sometimes even to impose its culture. Indeed, there is no human civilization that has not developed culinary tastes, nutritional rules, and food taboos that have been considered and experienced as specific and peculiar. Sometimes these gastronomic practices are linked to religious prescriptions, sometimes they are related to the material availability of food resources, and sometimes they are dictated by fashions, based on the fascination with unusual foods or innovative ingredients that can challenge tradition.

In this typically human cultural construction of rules to be respected, interpreted or broken in order to create an identity relationship with food, all civilizations have therefore elaborated their own specific dimensions at the table, which arise from the intersection of legal, religious, ethical, health, economic, political and sensory experiences. This Book Series aims to investigate all these different facets, in an attempt to enlighten new and different aspects of the complex dynamic that characterizes the unbreakable bond between human beings and food, believing that each contribution, while different and specialized, can help add new tiles to a mosaic which remains in constant evolution.
