The story of the production of pasta shows that not all the productive areas in early modern Italy were stagnating in the face of new economic competitors. Market demand and technological improvements created the conditions for a considerable growth between the 16th and 18th century. The leadership was taken by pasta producers from Campania and Liguria, who were the first ones to achieve A corporate autonomy since the 16th century. Focused on the Ligurian production, this essay offers, in the first part, some data relating to the production and commerce of pasta in the area of the Republic of Genoa; these make use of a large number of sources drawn from the records of food supply, guild activities and taxation, which could guide further research on the topic. The second part of the paper focuses on the case of Savona, where the production of pasta triggers an economic conversion from late medieval maritime trade to specialized crafts typical of the early modern age.
